Yogurt Lemon Blueberry Pancake

 I love pancakes and if you love pancakes as much as I do you definitely want to try this yogurt lemon blueberry pancake. It's so good and it's easy to make.







Ingredients 





Start off with two cups of flour and to the flour, add a couple of teaspoons of baking powder as well as some kosher salt. Now I know when I say lemon yogurt pancakes it might sound complicated, it's really actually very easy to make. Add about 3 tablespoons of sugar and get started on wet ingredients, 3 eggs and I know usually we don't put this many eggs and pancakes but these pancakes are thick and moist and very yummy they're also fluffy but they're pretty thick because of the Greek yogurt we're gonna put in So its about half a cup of Greek yogurt and go ahead and mix that up and add in some milk, if you really really wanted to punch up the lemon flavor you could add a little bit of lemon extract, I don't think it's necessary.Next add a couple of tablespoons of butter and then add some lemon juice and lemon zest, the lemon zest really gives it that nice lemony flavor that goes really really well with blueberries. Something about blueberries and lemon. They just work together and they love each other.Go ahead and combine the dry and wet ingredients and give all that a nice mix.Warm up Your griddle to 350 degrees and add some butter on there.


Carbs Disclosure 

Now full disclosure you can't be eating this many carbs every week depending on your metabolism the way your metabolism is set up, it just does not gonna work for everyone. But kids love these and they’re actually very nutritious, So i enjoy making this for them and every once in a while, I mean you can have a little sneaky sneak, I mean they're hard to resist lol.


Blueberry Syrup 





Once they’re ready and have that nice color take the pancakes off of the griddle and put them on a plate and then go ahead and get started on the blueberry syrup I decided to use the blueberries as syrup instead of putting them in the pancakes because I think it's a little bit tastier that way you really get the blueberry flavor. You can use fresh or frozen Blueberries 

Put those over medium heat and add in about a tablespoon of lemon juice, couple tablespoons of water, that lemon actually brings out the blueberry flavor really well, put some cornstarch in there and start to thicken it up.

Once it's nice and thick, lower the heat to medium-low and then add about 1/4 of a cup to half a cup of maple syrup just depending on how much you want. There's no wrong way to do this, if you add more syrup then you want to taste it and add more lemon or maybe even some lemon zest to this if you want to punch up the lemon flavor.

Once it's nice and thick and warm, take it off the heat and use it to top the pancakes.

It looks so good and it smells amazing, the blueberry and the lemon is just a great combination.
